You Say Tomato

Thursday I got a call from my friend Adrianne asking if I wanted to come tomato picking. She was wanting something to do to get out of the house and said that I could join her if I could be ready to go right after lunch. So we headed out to a farm in Bradenton for a great deal on tomatoes… only $0.20 per pound! I saw them in the store yesterday for $2.99 per pound. Can you tell that I am just so thrilled with picking my own produce this year? It’s just amazing to eat food that I saw growing out of the ground yesterday. It doesn’t get any better than that!

I love to cook with tomatoes and thought it would be great if I could stock up while they are so cheap. I do not believe that the tomato plants were very happy to be growing in hot Florida. They looked more than a little sad so we had to search a bit to find the good ones that were hiding.  Farmer Amelia (Adrianne’s 8 month old daughter) was less than thrilled to be out picking tomatoes so we didn’t stay too long. But it’s just as well because it was really hot and I still came away with more than enough for what I wanted. I got all of these tomatoes for only $2!!

I sliced up a couple fresh tomatoes for us to have with our dinner. I dressed them THE best way with a little vinegar, sugar, salt, and pepper. It’s the perfect mixture of tangy, salty, sweet. You’ve got to try them this way.

I decided that today would be my tomato prep day. I helped Grandma Sipes can tomatoes once when we were visiting them, so I was feeling brave enough to give it a try. I’m freezing mine instead of canning, but the process looks pretty much the same.  The hard part was figuring out the correct timing in the boiling water for the skins to come off without making the tomato too mushy. I got better after a few tries.

Then I peeled them and cut out the stems.  The freezing instructions said to squeeze out most of the juice and seeds.  That was the most time consuming part.  Then I portioned my diced tomatoes into cups.  I’m used to using canned tomatoes in most recipes so I wanted my freezer bags to hold the same amount.

The disappointment came when I saw how much I ended up with after so much work.  I boiled, skinned, sliced and diced a whole grocery bag of tomatoes to come away with… three little freezer bags. Now, I knew that it would make less than I was expecting, but even with that thinking it still made even less than I thought.  I’ll be going back for round two after lunch.  Hopefully it will go a little quicker now that I have a system.

So far I’ve only sustained one injury, I sliced into my pinky finger while peeling the skins. Ouch! These tomatoes had better be good after all this effort.

Space Shuttle Endeavour

Early yesterday morning, Jesse and I headed across the state for take two of trying to view the shuttle launch.  If you remember, I had gone to the first scheduled launch which was a no-go so we were really hoping for a better outcome this time.  We were not disappointed!

Our friends, Kevin and Julie, met us at our house around 11:45 Sunday night and we were on the road just after midnight (I wasn’t kidding about early morning).  We got to our prime location around 2:30 in the morning and there were already plenty of people staking out their territory.  Many people had their tents and campers set up along the sides of the road.  We parked the car and walked around deciding exactly where we were going to set up our “camp,” then went back to the car to unload.

It was awesome to get there while it was still so dark because we could see the launch site all lit up.

Let me just tell you that although it was totally worth it to ensure a great view, sleeping on a cement block under a bridge is something I don’t feel like I need to experience more than once.  I appreciated my bed a little extra last night.  It was pretty chilly and very breezy right at the edge of the water.  I don’t think I slept more than a few minutes here or there despite my wearing several layers and several blankets.  I’m not a very outdoorsy type person, just in case you couldn’t tell that.

Around 6:00 Monday morning we “woke up” to enjoy the sunrise.  It was absolutely beautiful to watch the sun peaking through the clouds while we ate breakfast.  Watching the shimmeries over the water as the sun got warmer was amazing!  We even saw a dolphin playing out in the water in front of us.

On a side note, I thought that spending the night outside would be a nightmare for my allergies.  Turns out that all the salty, sea air did wonders on my sinuses.  As we were sitting there I realized that I was breathing better than I have been in over a week.

The excitement was building as the launch grew closer, I thought Jesse was going to explode with the anticipation.  Someone nearby had their radio on so we could hear the final preparations and checklists.  Then the countdown started.  We heard the radio announcer say “lift off,” but then it took another second before we saw anything.  Then the smoke started billowing… then the glowing fire as the shuttle rose into the air.  Completely awesome and amazing!!

The sound came a lot later, long after we couldn’t see anything anymore. It was like a long rumble of thunder the grew louder and then slowly faded. We just sat amazed as we listened again to the radio announcer tell us how far away it was now and how fast it was traveling. So cool!

Kevin had his camera with the fancy lens for even more amazing pictures.  He and Jesse were taking turns shooting some great pictures throughout the day.  Here’s an even closer view of the launch:

Blueberries Galore

Yesterday I went blueberry picking with a group of friends from church. This was my first time picking blueberries. We were instructed by the farmer to eat as many as we wanted while picking. I ate enough that I didn’t need much lunch when I got home, they were tasty.

Nicole looked like a professional when she strapped on my bucket to help me finish filling it. Those blueberry bushes were making my eyes burn and water like crazy, not to mention making my nose run. I think the combination of eating lots of berries while being out in the field breathing blueberries was what sent my allergies over the top. It was still fun though, and we all enjoyed the “fruits” of our labor.

Later that night (after a benadryl induced nap) I got to work preparing all my blueberries. First on my list to make was blueberry ice cream.

I also made blueberry popsicles, and then froze lots of blueberries for future ice cream. We also have lots left to just eat fresh. We love blueberries!

We tried out the blueberry ice cream after lunch today. It was really good, but not quite as good as the strawberry ice cream.  However, since I already had the blender out yesterday, I also went ahead and made some strawberry ice cream too. I used some of the frozen strawberries that I picked last month.

I like to mix with Fage plain yogurt because it has no extra ingredients, but the recipe suggests using strawberry (or whatever flavor ice cream you’re making) to add extra flavor.

Then add some water, sugar, and blend until desired chunkiness and allow to freeze. When you want to eat some, it needs to sit out for about 20 minutes before you can scoop it because it freezes pretty solid. It’s actually more like a sherbet, but it’s as close to ice cream as I can have… so yummy!

4-6 oz. yogurt
2 tbsp. sugar (or to taste)
2 tbsp. water
