Bean and Pineapple Soft Tacos

I made these tacos for dinner the other night.  The recipe was very tasty and easily adapted to into a non-allergy version.  Here is the Taste of Home recipe before my changes:

Prep/Total time: 30 minutes

Ingredients:

1 can (15 ounces) black beans, rinsed and drained
1 large onion, chopped
1 medium sweet red pepper, chopped
1 tablespoon olive oil
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 jar (16 ounces) salsa
1 can (4 ounces) chopped green chilies
1/4 cup minced fresh cilantro
10 whole wheat tortillas (8 inches), warmed
Sliced avocado, shredded lettuce, chopped tomatoes, shredded reduced-fat cheddar cheese and reduced-fat sour cream, optional

Directions:

Mash half of the beans; set aside. In a large skillet, saute onion and red pepper in oil until tender. Add the pineapple, salsa, chilies, mashed beans and remaining beans;
heat through. Stir in cilantro. Place 1/2 cup filling on one side of each tortilla. Add toppings of your choice; fold in half. Serve immediately.

My changes:

I used half red pepper and half green pepper and skipped the green chilies. I substituted plain tomatoes for the salsa. I also added about half a pound of ground beef to make the filling a little thicker. I added just a tad of salt, pepper, and chili powder to taste. And instead of tortillas, we wrapped the filling inside large romaine lettuce leaves. We topped them with a little shredded cheese and gobbled them up.

This made lots of good food for how cheap and easy it was to make. We will be enjoying the leftovers for lunch today, and I will definitely be making these again!

Discovery of Enjoy Life Foods

I have been on my allergy diet for quite some time now. I feel so much better avoiding all of the foods that we bothering me so much. However, I sure do miss the of the convenience foods we used to buy such as hamburger helper, sauce mixes, and especially snack foods. You know something can’t be too good for you when the ingredients list takes up the entire side of the box. It’s no wonder I felt crappy with all the crazy stuff that was in our food. I try to convince myself that my fresh and healthier alternatives are just as yummy, but the truth is… sometimes I need junk food!

Double chocolate brownieThat’s why I was so excited yesterday when I discovered Enjoy Life Foods. I was once again spending forever in the organic section looking for something new to try. The problem is that so many of the gluten free products use corn starch or some other form of corn. Enjoy Life cookies are free from wheat, soy, corn, milk, and eggs! I bought the double chocolate brownie cookies to try first. I was so eager to try them, I had one right after breakfast… very yummy! That was the first cake-y food I’ve enjoyed in months because I’m always so afraid of having corn syrup. I can’t wait to try more of their products. My grocery store only had a couple of their cookie varieties, but I really want to try their snack bars. The only thing I’ve been able to have for snacks is fruit. I don’t think this box of cookies will last too much longer! 🙂

The only disappointing thing about Enjoy Life Foods is that their products aren’t for sale on their website.  I don’t understand why they wouldn’t want to sell directly to the consumer.  It would be a whole lot easier to order online and have the snacks shipped right to me than to have to drive around to different stores in my area to see which store carries each item.

**Update**  Enjoy Life Foods replied to my post with a link to where I could order online!  It’s slightly cheaper than the store price too!

Red

Jesse and I are a part of a Bible study group that meets on Monday nights. Since this Monday happened to fall on Valentine’s Day, we thought we would take a break from our study and just have a social/game night. Who doesn’t need an excuse for a little party, right? So we were instructed to come hungry and wear red. I thought the red would be for Valentine’s Day, but then we were given a small tip the day before the party that we just might want to brush up on on Chinese New Year facts. Then the red made more sense.

Our group met together at Kyle and Gigi’s house. Gigi loves to entertain guests and loved the chance to teach all of us some of the history of her background. She has also become my allergy buddy, as she has also recently found out that she has some food allergies of her own. We exchange stories about what foods we really miss being able to eat, and how long we spend at the grocery store reading all of the labels before we buy things. I even left with a goody bag of new “safe” foods to try.

It was fun to try some Chinese New Year food! Even more fun that I knew it was all gluten free, since that is one allergy we share. It was all very yummy, and I think I will be using some of the new foods I had for the first time. After dinner was over, it was time for our quiz. Since we were warned to learn some Chinese New Year facts, Jesse read a little bit about it at the dinner table the night before… maybe I should have payed a bit more attention.

The quiz was fun though, and I did alright. The winner came down to a close finish, but Jesse ended up in first place after the tie breaker question… and won the prize!

The rest of the night was games and hanging out. When we left our party favor was in a small red envelope. Chinese New Year gifts traditionally come in a small red packet. Our packet contained the beatitudes.
