Apple Crisp

Apple crisp has always been one of my favorite desserts! I’m so glad that I can still enjoy this treat despite my food allergies. This recipe is quick and easy, it’s the perfect thing to make for a last minute dessert or for surprise guests.

Start by peeling and slicing about 6 apples. It’s best to use granny smith apples, but any type will work. I often will use a variety for a mix of flavors.

Peeling applesSliced apples

Topping mixture:

3/4 cup brown sugar
1/2 cup oats
3/4 tsp cinnamon – I use closer to a tbsp… yum!
3/4 tsp nutmeg
1/3 cup butter, softened
1/3 cup flour or 1/6 cup arrowroot (optional)

(The original recipe uses flour which I eliminate because of my wheat allergy. It does make the topping a little crispier, but mine turns out just fine without it. Sometimes I’ll substitute arrowroot, but often I’ll just make it without that too.)

Topping

Blend everything except the butter together. Cut in butter until the butter is in pea sized pieces. Spread topping over apple slices.

Ready for oven

Extra tip: Divide topping into thirds and store in the fridge for separate, super quick use. When it’s just me and Jesse, I’ll often use a much smaller dish and use only two apples with a third of the topping. This time was also just me and Jesse, but I had lots of apples to use so I made a whole one… we had no problem finishing it anyways.

Bake at 375 until topping is golden brown and apples are tender, about 30 minutes. Makes about 6 servings.

Apple Pork Chops

This is a recipe that my mom recently found and shared with me. It’s quickly become one of my favorites to make because it’s so quick and simple. Plus it’s a crock pot recipe so it makes a great dinner for a busy day.

Start by mixing together 3 tbsp. of packed brown sugar, 1 tsp. (or a tad more) of cinnamon, and 1/2 tsp. of salt.

Sugar mixture

Then slice 2 or 3 medium yellow apples.

Sliced apple

Place pork chops in the crock pot and cover with apple slices. Sprinkle sugar mixture over apples. Cover and cook on low for 6-8 hours.

Pork with apples

That’s it! These come out so soft and yummy. I scaled my recipe back to make for just two of us. I think I only had to cook on low for about 4-5 hours for only three pork chops. This makes great leftovers too because the apples keep the pork moist.

Enjoy!

Baked Hamburgers

Baked hamburgers is a recipe that has been in Jesse’s family for years. My recipe card notes that it was originally from his great-grandma. So, I pretty much had to learn this recipe to marry into the family. I’ve come to love having baked hamburgers as much as Jesse does.

When I was first diagnosed with food allergies we went quite a while without making these since there are several ingredients in them that I can’t have. I finally decided that I needed to rework the recipe to make them allergy-safe for me. I’ve made them several times in recent months as we make up for the time we lost not having them. It’s one of those comfort food recipes that you just don’t get tired of having.

I start by finely chopping half an onion and mixing it with one pound of ground beef. Then I form the beef into patties about the size that would fit in the palm of my hand. I find that one pound makes approximately 10-12 patties, which is the perfect amount for Jesse and me to have dinner with leftovers for the next night.

Burgers

Then I make the sauce by combining 1/2 cup of sugar, 2 tbsp. water, 1 cup ketchup, and 2 tbsp. mustard. Heat the sauce in the microwave for about 30 seconds to thicken a little, stir, and heat another 30 seconds. I like to taste the sauce to make sure it has the right flavor and adjust if necessary. I often add a tad more mustard, just to make sure there is enough tangy-ness to balance out all the sugar… I don’t like the sauce too sweet.

Sauce

Finally, pour the sauce evenly over the patties and they are ready for the oven. Bake at 350 for about 1 hour. Extra tip: I will often split this into two dishes of five or six patties each. I bake one for that night’s dinner and stick one in the fridge to bake in the next day or so. That way it’s as easy as having leftovers, only they are freshly baked!

Ready to bake

I’ve had these pictures saved for a while because I wanted to get a picture of the final product before posting the recipe. However, every time I make them they smell so good and we are so anxious to eat them that I keep forgetting to get a final picture. So, you’ll just have to see for yourself what they look like cooked.

Also, here is the original, non-allergy version of the recipe if you’re interested:

1 lb. ground beef
1/2 cup milk
1/2 cup bread crumbs
1 egg

Sauce:

1/2 cup sugar
1 cup ketchup
2 tbsp. mustard
2 tbsp. vinegar

Give these a try. The recipe also easily scales up to make for a larger group. Enjoy!
